Avocado and Ghee Toast

All of my meals are planned with one very important macronutrient leading the way, protein. Through the years I’ve come to learn that my body needs a lot of protein in order to stay full and energized. I also strength train regularly, so the protein helps with my muscles. That’s why I was glad this recipe was shared with me. I always take my own liberties with recipes, so I change this one up almost every time I make it. It is so easy and quick to put together and while it fills me up, it’s not heavy at all. This recipe was shared by a yogi friend, Darlene B.

I use gluten-free (GF) toast but any toast will be delicious. My favorite GF bread I’ve tried is Udi’s. It holds up well after being thawed and either toasted, cooked with, or simply made into a sandwich. For this recipe, if it’s for breakfast, I’ll make it with Udi’s cinnamon raisin toast. If it’s an afternoon meal I’ll use whole-wheat or chia millet GF toast.

You’ll need:

2 pieces of bread, toasted

1 TBSP of ghee, or any organic, grass-fed unsalted butter, per piece

1 avocado, smashed

1/2 cup organic blueberries

Put it together:

While toast is still warm, spread ghee on top. Spread equal parts smashed avocado on top. Top with blueberries.

It might sound strange having a dish with avocado and blueberries but the tastes and textures compliment each other. Depending on the season, and time of day, I’ll mix up the topping. I’ve used thinly sliced peaches, bananas, or strawberries, with a pinch of cinnamon or cardamom or a drizzle of honey, for a sweeter topping. For more savory toppings, sliced cucumbers or organic tomatoes with salt and pepper on top are nice. You could make this an open-face sandwich by adding spinach, lettuce, or kale, then tomatoes, red onions, cucumbers, any veggie you like on top. Throw on some big basil leaves too for extra flavor.

Where do you find ghee, and what is it anyway? Ghee is clarified butter and is used extensively in Ayurvedic medicinal practices. Ayurveda is Sanskrit for “life-knowledge” and is one of the oldest practiced systems for a healthy body, mind, and spirit. Think of this as a more pure and higher protein form of butter. It’s shown to reduce inflammatory conditions within the body, aids in digestion and intestinal balance, is lactose free so those with dairy allergies should be fine to consume it, and it has a high smoke point, meaning you can fry or stir-fry with it at a high temperature without it burning. Soon I’ll post my recipe for ghee, but in the mean time you can find ghee at almost any grocery store. Look in the ethnic or Asian section.
